Smores in the Oven, or S’mores Bars, are such an easy dessert to make. We all love eating s’mores around a campfire, but now you can make them at home in the kitchen. This Smores dessert recipe is rich, decadent, and totally worth baking.
S’mores bars are so easy to make. I love this recipe. Plus, they are so rich and decadent that you don’t need to eat a big piece. If you’re taking them to a party, they will feed a lot of people.
And I love s’mores. A campfire just isn’t the same without them. We were in Gatlinburg at a cabin rental years ago and made a small campfire. I bought all the ingredients including graham crackers, marshmallows, and Hershey chocolate bars.
Would you believe that was the first time my husband ever tried s’mores? Needless to say, he was hooked and we have them all the time, and we even make them when we have a fire in the living room fireplace.
And these are the perfect s’mores bars for a crowd.
How do you make s’mores cookie bars in a pan?
- Crush the graham crackers and add them to a greased casserole dish. Pour melted butter over the crumbs and mix together. Press the crust into the bottom of the pan.
- In a large bowl, mix the sugar, brown sugar, melted butter, vanilla, and eggs. Add the flour, baking powder and salt to the bowl and mix well.
- Next, add the marshmallows and chocolate chips to the bowl. Mix again.
- Spread the cookie dough onto the baking dish on top of the graham cracker crust.
- Sprinkle the Cinnamon Toast Crunch, marshmallows, and Hershey bars on top.
- Bake for approximately 45 minutes or until a cake tester comes out clean.

Crust
Start off by adding the graham crackers to a large bag. I used about 1-1/2 sleeves to equal two cups of crushed graham crackers.
You can use a Cuisinart to crush the graham crackers, but if you don’t have one a bag will do the trick.
Make sure you get most of the pieces crushed. It only took me a couple of minutes to get everything completely crushed.
Add the crushed graham crackers and melted butter to a greased 9″ x 13″ dish. Mix the crackers and butter until it looks like all of the crumbs have butter on them.
Spread the crackers and butter into the dish and press them down flat. I used the bottom of a measuring cup. Anything flat will work to press the crumbs down.
Place the dish in the fridge or freezer so the butter and crumbs will harden a little bit, which will help when spreading the cookie dough.
Cookie Dough
In a large bowl, add the sugar.
Next, add the brown sugar to the bowl.
Pour the melted butter into the bowl, as well as the vanilla.
Start mixing the ingredients and then add the eggs to the mixture.
Mix everything together until it is well blended.
The next step is to add the flour, salt, and baking powder to the bowl. Once you add the dry ingredients, mix everything together for a minute or so, until the ingredients are well blended.
Almost done – add the chocolate chips, so you’ll have chocolate flavor throughout the s’mores cookie bar.
Last but not least, add the marshmallows to the bowl and mix together.
Gather your toppings. I used about a handful of the Cinnamon Toast Crunch Cereal, as well as two Hershey chocolate bars, and about 1/2 cup mini marshmallows.
Grab the crust out of the fridge or freezer.
Spread the cookie dough on top of the graham cracker crust.
Next, sprinkle about 1/2 cup of marshmallows on top of the dough.
Sprinkle the Cinnamon Toast Crunch cereal all over the smores bake dough. I used about one handful of the cereal.
Finally, press the Hershey chocolate bar pieces down into the dough a tad. You can lay a few of them on top. They will amazingly keep their shape for the most part.
Bake the oven baked smores bars for about 45-50 minutes, or until the cake tester comes out clean. It seemed like I was having to cook it too long, but it was still pretty gooey on the inside, so I kept in going in increments of five minutes toward the end.
If the top seems like it’s getting a little too brown, but the inside is still gooey, turn the oven down to 300-degrees and bake for five minutes at a time until the cake tester comes out clean.
Smores In the Oven (S’mores Bars)
Once the smores bar recipe is done baking, allow it to sit and cool for about one hour. These are a bit like blondies, and let me tell you, they are sooooo delish. And my kitchen smelled like an ice cream shop while they were baking and it was nice.
How do you make smores in a fireplace?
Grab some long skewers and place one or two marshmallows on the end. Stick them over the fire and let them roast. If you want them burnt (like I do) hold them closer to the fire. We make them all the time when we have a fire in the living room fireplace.
Can I roast marshmallows in my fireplace?
Yes, however, I would not roast them in a gas fireplace–only roast them in a fireplace that burns wood. We burn wood in our fireplace and I’ve lost many a marshmallow in the fire. If you have a gas fireplace, you’re going to have some messy marshmallows to clean up later.
How do you melt chocolate for S’mores?
We always set our Hershey’s chocolate pieces on top of our graham crackers. When we add the roasted hot marshmallows on top of the chocolate it helps melt them. You can also set them near the fire to heat them up a little. Always use caution.

Ingredients
Crust
- 3/4 cup melted butter
- 2 cups crushed graham crackers (about 1-1/2 sleeves)
Cookie Dough Layer
- 1 cup sugar
- 1-1/4 cups brown sugar
- 3/4 cup melted butter
- 2 teaspoons vanilla
- 3 eggs
- 3 cups flour
- 2-1/2 tsp. baking powder
- 1 tsp. salt
- 1 cup semi-sweet chocolate chips
- 1 cup mini marshmallows
Toppings
- 2 to 2-1/2 Hershey Bars (break up pieces of Hershey bars)
- 1 large handful of Cinnamon Toast Crunch Cereal
- 1/2 cup mini marshmallows
Instructions
Preheat oven to 325-degrees. Grease a 9" x 13" baking dish.
Crust
- Melt the butter in the microwave for about one minute.
- Crush the graham crackers in the Cuisinart or in a large baggie.
- Pour both the graham crackers and the butter into the greased baking dish. Stir until the graham crackers are covered with butter.
- Press into the bottom of the pan and place in the refrigerator or freezer for a few minutes.
Cookie Dough Layer
- In a large bowl, add the sugar, brown sugar, melted butter, and vanilla. Mix together.
- Add the eggs and mix.
- Next, add the flour, baking powder, and salt and mix well.
- Finally, add the chocolate chips and mini marshmallows and mix well.
- Spread the cookie dough on top of the graham cracker crust.
Toppings
- Sprinkle the mini marshmallows on top.
- Sprinkle the Cinnamon Toast Crunch on top.
- Finally, add the Hershey chocolate bar pieces to the top.
- Bake for 45-50 minutes, or until cake tester comes out clean. If the top seems like it is getting pretty brown, lower the temperature to 300-degrees and check with cake tester or thin knife every five minutes.
- Allow the bars to cool for at least 30 minutes.
