Creamy Peanut Butter Sandwich Cookies are so rich and delicious. If you love peanut butter, you are going to love these. Once again, the neighborhood kids give these a thumbs up. I had one kid in the kitchen helping spread the filling. She was thrilled to help and lick the spoon! It reminded me of helping out in my grandmother’s kitchen. I always got to lick the beaters, but I had to share with my sister (so not fair, right?).
This is a great recipe for peanut butter cookies, without the filling. But, trust me, you want the filling. I am craving it right now.
Step 1: Mix the peanut butter, shortening, and sugars.
Step 2: Add the eggs, one at a time.
Step 3: Add the flour mixture and mix.
Step 4: Roll the dough into 1-inch balls, and press down with a fork. Make a criss-cross pattern. See below. I use a silicone mat. It works great and clean up is easy.
Step 5: Bake the cookies at 375-degrees for approx. 7 to 9 minutes.
Next, make the filling. It’s easy. Throw the peanut butter, powdered sugar, vanilla, and milk into a medium bowl, and mix the ingredients. If your filling comes out a bit thick, just add a tablespoon of milk at a time. Once you finish the filling, spread it onto the cookies, and enjoy!
