Peanut butter and chocolate popsicles, with dairy-free coconut milk, might just be one of my favorite treats. I love to test the likability of food with help from the neighborhood kids. They are a true test of what tastes good, and what doesn’t. These peanut butter and chocolate popsicles were a hit.
One of the kids said it tasted just like a Reese’s Peanut Butter Cup. That is a beautiful sound to my ears.
We only have a few weeks left of school, and that means it’s time to try out a few new popsicle flavors and cram the freezer full of good treats, so the kids can grab a popsicle after they’ve been running around outside in the hot sun.
These popsicles are a cinch to make!

Step 1: Add a can of coconut milk, honey, and the peanut butter to a mixing bowl. Mix all of the ingredients with a whisk. The peanut butter will be in tee tiny clumps, so don’t worry about getting it perfectly smooth.
I used local honey, which is known to help with allergies. If you can get a hold of some, it’s a great idea.
Step 2: Pour into popsicle molds, and place in the freezer for approximately 45 minutes. Do not place the handles in the molds, yet.
I used Mamasicles molds. I like the way they stand up so you can pour the popsicle into the mold a little easier–although, I am a bit messy with them. But, after I was done, I was able to rinse off the bottom without knocking them all over. They fit pretty snug in the holder.
Step 3: After the peanut butter and chocolate popsicles have started to harden in the freezer, pull them back out and squirt a little chocolate syrup in them. Some of the chocolate is going to sink to the bottom, and that’s ok. You can see in the picture how a blob of chocolate is just fine by me.
Place the handles in the molds and pop them back in the freezer to freeze overnight.
Once they freeze, they are ready to eat. I’m giving you permission to be a little piggy and grab one before everyone else does, because these babies go fast. Trust me on this one.
