Jiffy Cornbread Casserole with Ground Beef

Jiffy Cornbread casserole with ground beef is a great meal to fix for the entire family. The cheeseburger casserole recipe is budget-friendly and feeds quite a few people.

The dish fed two teenage boys, my husband, and myself and we had leftovers. Plus, it’s super easy to make, which takes the pain out of making dinner. 

Jiffy Cornbread Casserole with Ground Beef

One of the frustrations of having two teenage boys is feeding them and keeping them full. It’s not an easy task and Jiffy Corn Muffin Mix has come to the rescue more often than once. 

The muffin mix is filling and mixes up well with veggies, ground beef, onions, and cheese–plus, the casserole recipe is super easy to make.

Make the Ground Beef Ahead of Time

I cooked the ground beef the day before while I had a little extra time and when I was ready to make the recipe, I was able to pull it out of the fridge and have the meal in the oven and cooking in less than 15-minutes. It takes about 30 minutes to cook the meal, and it’s ready to go. 

The best thing about this recipe is that you’re getting almost all of the food groups into one dish. 

What do I need for this beef casserole recipe?

  • Cooked ground beef
  • Onion (diced)
  • Can of cream of chicken soup
  • Frozen mixed vegetables
  • Milk
  • Eggs
  • Jiffy Corn Muffin Mix
  • Shredded cheddar cheese
  • Salt and pepper to taste

How Do I Make the Cheeseburger Casserole?

  1. Firstly, mix the Jiffy Cornbread mix, eggs, and 2/3 cup of milk and spread it into the bottom of a greased 9″ x 13″ casserole dish.
  2. Secondly, add the cooked ground beef, veggies, onions, cream of chicken soup, and half of the shredded cheese to a large bowl and mix it well.
  3. Add 1/4 cup of milk to the ground beef mixture and mix. 
  4. Thirdly, pour over the cornbread, add the salt and pepper, and top with the remaining shredded cheese. 
  5. And finally, bake in a preheated oven for 30 minutes and the cheese is melted and toasty on the top. 
  6. Serve and enjoy!

Jiffy Corn Muffin Mix

Firstly, start by adding the Jiffy Corn Muffin Mix to a medium-sized bowl.

Pour the milk and eggs into the muffin mix and stir everything together.

Grease the casserole dish and spread the Jiffy Muffin Mix on the bottom of the pan. You will need a 9″ x 13″ pan for this recipe, otherwise, you’ll have food pouring over the sides.

Grease the casserole dish liberally and I cannot stress this enough, or you’ll be spending a lot of time cleaning the dish after dinner. I didn’t really grease mine enough this time and it stuck to the pan. 

Should I Bake the Cornbread First?

Some people like to bake the Jiffy Corn Muffin Mix before adding the rest of the ingredients because it will give the cornbread more of a crunch, but I like to cook the cornbread and the beef mixture altogether, but either way will work.

If you do decide to cook the cornbread before adding the casserole to the top, don’t cook it as long as the cornbread directions state because it will come out super dry. Try cutting the cornbread cooking time in half to see how it comes out. 

If you decide not to cook the cornbread first the dish will still taste amazing. I actually prefer that it cooks all together. 

Ground Beef Topping Mixture

Secondly, add the cooked ground beef to a large bowl. The Fresh Market offers ground beef at a discount one day a week here in town, so I head down to the store and purchase a handful of ground beef and chicken and save a lot of money. 

If you can find a place that offers it for a good price, you can freeze it and really save some money. I will buy several pounds on sale day and freeze the meat and then cook it throughout the next couple of weeks.

Next, add the frozen vegetables and diced onions to the bowl. I only had peas in my freezer, so that is what I used this time. You can use mixed vegetables or any type of small diced veggies that you like and everyone will get their protein and veggies!

The kids like the mixed veggies with corn, carrots, peas, and butter beans. Adding that to the dish is always a hit, and I’m getting healthy food in them.

Add the cream of chicken soup, half of the shredded cheese, and the remainder of the milk to the bowl. Now’s a great time to also sprinkle some salt and pepper over the top. Give everything a good stir.

Thirdly, you’re going to spread the food over the Jiffy Corn Muffin Mix.

Sprinkle the rest of the shredded cheddar cheese on top of the casserole.

And finally, bake the Jiffy Cornbread casserole recipe for 30-minutes or until the cheese is nice toasty on top. Doesn’t it look delicious?!

This is also a dish that you can make ahead of time and stick in the freezer for a later date and pull it out when you’re ready to cook it.

It’s great if you’re hauling kids all over the place and need to have something ready for dinner, or guests are coming for a visit and you need to prepare food ahead of time.

It’s an easy and filling casserole and moreover, I love the cheesiness of the dinner. My kids loved it and I have a picky eater at home.

Furthermore, we make this casserole dish often because of how filling and delicious it is. 

What is in a casserole?

A casserole dish usually contains several ingredients including the main ingredient, such as the ground beef, and side items like the vegetables and is cooked in one dish. I love casserole dishes because you can pretty much throw everything into the dish and cook it. 

Can I make this dish ahead of time? 

Yes, although I would make up the beef mixture ahead of time and prepare the cornbread when you are ready to bake the dish. Then add the cornbread to the bottom of the dish, pour the beef mixture over it, top with cheese and bake. 

My cornbread came out dry, what do I do?

By its nature, cornbread is crumbly, so you can add two tablespoons of sour cream to the cornbread mixture and that will help keep it from being so dry.

Ingredients

  • 1 lb cooked ground beef
  • 1/4 cup onion (diced)
  • 1 - 10.5 oz. can cream of chicken soup
  • 1 cup mixed vegetables
  • 1/4 cup milk + 2/3 cup milk
  • 2 eggs
  • 2 - 8.5 oz. boxes Jiffy Corn Muffin Mix
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste

Instructions

Preheat oven to 350-degrees. Liberally grease a 9" x 13" casserole dish.

  1. Add the two boxes of Jiffy Corn Muffin Mix, eggs, and 2/3 cup of milk to a large bowl. Mix everything together and spread into the casserole dish.
  2. In another large bowl, add the cooked ground beef, diced onion, vegetables, cream of chicken soup, salt and pepper, and half of the shredded cheese. Mix everything together well.
  3. Add the 1/4 cup milk and mix.
  4. Spread over the Jiffy Corn Muffin Mix and top with the remaining cheddar cheese.
  5. Bake for 30-minutes.
