Funeral Potatoes

Funeral potatoes are one of the best potato dishes out there. They are the perfect side dish for any meal, as well as potlucks, holidays, and parties. The easy cheesy potatoes are a cinch to make and cook up in less than an hour.

This cheesy potato casserole is one of my favorite side dish recipes. I could honestly eat this a couple of times a week. I’m not always big on leftovers, but if there’s leftovers, I can eat them all. 

Funeral potatoes are also a very budget-friendly side dish that can feed quite a few people, that’s why it makes a great dish for the entire family or to share at a potluck. This cheesy potato recipe can go a long way. 

What do I need to make funeral potatoes recipe?

  • Large bowl
  • Spatula
  • 13″ x 9″ casserole dish
  • Non-stick spray
  • 32 oz. diced hash brown potatoes
  • Butter
  • Can of cream of chicken soup
  • Shredded cheddar cheese
  • Sour cream
  • Corn Flakes
  • Minced onion seasoning
  • Oven

How do I make funeral potatoes?

  • Preheat the oven to 350-degrees and grease a 13″ x 9″ casserole dish.
  • Add the frozen cubed potatoes to a large bowl. 
  • Next, add the shredded cheddar cheese, cream of chicken soup, sour cream, onion seasoning, and salt and pepper to the bowl.
  • Mix everything together well and pour into the greased casserole dish.
  • Bake for 20 minutes. 
  • Remove from the oven and spread the Corn Flakes on top. 
  • Pour melted butter over the top and place back in the oven. 
  • Bake for 20 more minutes.

To be begin making the cheesy potato recipe, start by adding the cubed potatoes to a large bowl. 

I used frozen potatoes because it just makes life easier around here. They don’t have to be frozen in order to cook them, though.

Next, add the shredded cheddar cheese to the bowl.

Now, pour the condensed cream of chicken soup into the bowl.

Add the sour cream.

I love sour cream. There are so many dishes that include sour cream, such as this Jiffy Cornbread recipe, and it makes them so much more moist, as well as dips that are easy to make and perfect for parties

Sprinkle the onion seasoning, salt, and pepper on top and mix it all together.

Once you have everything mixed together, slide the cheesy potato casserole into the casserole dish and spread it out. Place it in the oven and bake for 20 minutes.

Remove the funeral potatoes from the oven and sprinkle the Corn Flakes on top.

Melt the butter and pour it over the Corn Flakes and return to the oven for 20 more minutes.

Total Time 50 minutes

Ingredients

  • 32 oz. bag hash brown potatoes
  • 2 cups shredded cheddar cheese
  • 1 - 15 oz. can cream of of chicken soup
  • 2 cups sour cream
  • 1 tsp. minced onion seasoning
  • 3 cups Corn Flakes
  • 1 stick butter, melted

Instructions

Preheat oven to 350-degrees and grease a 13" x 9" casserole dish.

  1. Add the cubed potatoes to a large bowl.
  2. Next, add the cheddar cheese, cream of chicken soup, sour cream, onion seasoning, salt, and pepper to the bowl.
  3. Mix everything together well and pour into the casserole dish.
  4. Bake for 20 minutes and remove from the oven.
  5. Sprinkle the Corn Flakes on the top of the potatoes.
  6. Melt the butter and pour over the Corn Flakes.
  7. Return to the oven for 20 minutes.
