The kids got out of school for the summer just the other day. I always start out with these big plans to cook, make delicious treats, and follow through on grand ideas, and we end up snacking on junk all summer and laying by the pool. So, I thought I would at least try to aim for one week of nutritious treats. We will worry about the rest later.
I had already decided that we were going to wean off of sugar this summer. It would be crazy to say that we are going to get rid of it altogether, because that is just, well, nuts. Let’s be real if I am going to a friend’s house and she offers me some M&M’s, step aside, I am going to eat them. But, for the most part, we need to stay off of preservatives and sugary treats.
I decided to try something new. I think it’s a recipe that can be tweaked any way you would like. I don’t use my Cuisinart enough, so I was excited that I could use it for the popsicle recipe. I added the combination of coconut milk, strawberries, blueberries, local honey, and bananas. It was easy to mix up in the Cuisinart.
Once I mixed up the ingredients, it turned a beautiful shade of pinkish-purple. I’m sure the flavors are going to be amazing.
I have to brag a little bit on these popsicle molds. I bought them for dirt cheap at the Publix store. Today is the first time I have used them, and we will see how well they set up. But, I tend to be a bit of a neat freak (in some areas of my life, not in all – ha!). As you can see, it got a little messy as I poured the mix into the molds. Once I put the lids on, I ran them under the water and cleaned them up a bit.

I am excited about the lids. I know, it’s strange to be excited about the lids, but these are special. I have messy kids. Let’s be honest, I don’t know a kid out there that isn’t messy. When the popsicles melt, the liquid drains down into the lid and there is a plastic straw connected to the side, and kids can drink the liquid as it melts. Win-win for everyone!
