Cheesy Potato Recipe

This cheesy potato recipe goes great with any meal, including holiday meals. The easy cheesy potatoes make a great side dish at Easter, Christmas, Thanksgiving, or any holiday. The casserole dish only takes about 15 minutes to prepare and get into the oven to cook.

I love easy recipes and easy holiday recipes make it possible to spend time with the family instead of spending all of your time in the kitchen. 

This cheesy potato recipe is the perfect side dish for Christmas, Easter, and Thanksgiving, or a busy night when you want to feed the family well, but don’t have much time. 

The Easter holiday is coming up and I love this time of year. Spring is pretty much here in Florida–I can always tell by the onslaught of pollen on our cars, and pretty much everything outside. If you sit on the front porch for five minutes, you’ll be covered in yellow pollen dust. 

With Spring and Easter, we get a renewal. A beautiful promise from God on Easter morning, blooming flowers, gorgeous scents in the air, and perfect weather. 

One of my favorite things about Easter is getting to hang out with family. We always picnic with my husband’s family, and it’s a wonderful time to catch up, share stories, and just have a great time together. 

And we always include lots of food, and this creamy potato bake is perfect for the occasion.

What do I need to make the cheesy potato bake?

  • Oven 
  • Saucepan
  • Whisk
  • Diced potatoes
  • Heavy whipping cream
  • Milk
  • Dijon mustard
  • Shredded cheddar cheese
  • Salt
  • 9″ x 13″ Casserole dish
  • Non-stick spray

How do I make the potato casserole recipe

  1. Spray the casserole dish with a non-stick spray.
  2. Add the diced potatoes to the dish and spread them out. 
  3. In a medium saucepan add the heavy whipping cream, milk, dijon mustard, salt, and shredded cheese and turn on medium heat. 
  4. Cook until the cheese melts. 
  5. Pour the cheese mixture over the potatoes and bake uncovered for one hour.

Spray a 13″ x 9″ casserole dish with non-stick spray. 

Spread a bag of frozen cubed potatoes into the dish. Easy peasy, y’all!

In a medium-sized saucepan, add the milk and heavy whipping cream.

Have I ever told you how much I love heavy whipping cream? It adds such a wonderful creaminess to any dish.

Add the dijon mustard and a pinch of salt to the saucepan and mix well.

Add the shredded cheese and cook on medium until the cheese is melted. Stir on occasion.

Once the cheese is melted, pour the ingredients over the cubed potatoes.

Bake the cheesy potato casserole uncovered for one hour at 350-degrees.

Can I freeze cheesy potatoes after baking?

Yes, but make sure you freeze it shortly after you cook it and make sure that you wrap it up well. Tinfoil pans work best for cooking and then freezing. 

How do you reheat cheesy potatoes?

If they are not frozen, you can scoop them into a bowl or a plate and microwave for a couple of minutes.

But, if the easy cheesy potatoes are frozen, you can place them into the oven at 350-degrees for about half an hour and then check to see if they are hot enough.

Continue heating for about ten minutes longer if they are not quite hot enough.

Should I thaw frozen hash browns before cooking?

No, for this recipe it is not necessary to thaw the potatoes before cooking. You can place the frozen potatoes into the casserole dish and they will heat up in the oven while they bake.

How long can cheesy potatoes last in the fridge?

The cheesy potato recipe will last three to five days in the refrigerator.

Ingredients

  • 32-oz. bag of frozen diced potatoes
  • 1 cup heavy whipping cream
  • 1 cup milk
  • 1 Tbsp. dijon mustard
  • 16 oz. shredded cheddar cheese
  • Pinch of salt

Instructions

  1. Preheat the oven to 350-degrees.
  2. Spray a 13" x 9" casserole dish with non-stick spray.
  3. Add the potatoes to the dish and spread out evenly.
  4. In a medium-sized saucepan add the heavy whipping cream, milk, dijon mustard, salt, and shredded cheese. Stir on medium heat until the cheese is melted.
  5. Pour over the potatoes and bake uncovered for 1 hour.
