We eat a ton of Cheerios–like an obnoxious amount. When they are BOGO, I buy as many boxes as the store will allow me, and go back the next day and get some more. We’re that bad. Cheerios are great, and they’re suuuper easy to make, but they won’t keep you going as long as an on the go breakfast biscuit sandwich.
I’m all about easy, so most of the time, Cheerios win out. Easy is cool. But, I decided I would get a little ambitious this week and make some breakfast sandwiches to freeze, so the hubs and kids can pull them out of the freezer every morning and have something a little more exciting, and not feel hungry an hour later.

It’s a lot less expensive to make everything at home, as opposed to buying something premade. However; let me just say ahead of time, that if your days are full, and you don’t want to spend an hour in the kitchen, it’s ok to buy frozen, premade food. You can get some really yummy biscuits in a can (or frozen), sausage patties, and even premade eggs to go on your sandwich. This will totally cut your time, of making the on the go breakfast biscuit sandwiches, in half.
I started out making the biscuits. I have a biscuit recipe, but they didn’t fluff up as much as I wanted them to. So, I grabbed another recipe off of Pinterest, from Cooking Maniac and they are soooooo flippin’ delicious, and they turned out amazing. It was a lucky thing that I didn’t eat all the biscuits before I loaded them down with the eggs, cheese, and sausage. Seriously, it was not an easy task to only eat a couple of the biscuits. I mean, look at them. Flaky, buttery, delicious.
I’m of the opinion that my grandfather was the luckiest man alive. My grandmother made biscuits every single day. Yes, every day. From scratch. Does it get better than that? Um. no. And then, they’d add butter and homemade jelly. Ok, I am getting off topic. But, how can you not get off topic when it comes to hot buttered biscuits? Yeah, you can’t. Imposssssible.
Ok, I will try to move on. Next, I fried the sausage in my skillet.
I cooked up the eggs next. I cooked six eggs at once, and that made things go a little faster.
Finally, I added the food to the biscuits. Easy peasy. Seriously, this is such a simple task.
- I will repeat it again, you’re not a bad mom if you buy this stuff frozen and put the sandwiches together. You’re trying to feed your family some good food, so go for it!
I wrap the on the go breakfast biscuit sandwiches in clear wrap and then pop in a bag before they go in the freezer, so they keep and don’t end up with frostbite.
I put the biscuits sandwiches in a baggie before I put them in the freezer. Now, they’re all snug in their bag and ready for someone to grab them for breakfast.

Those breakfast sandwiches look fantastic! I agree.... when I was younger I thought I would be better mom/more spiritual/better wife/fill in the blank if I did everything from scratch, had a perfect house, and was basically perfect as I could be. My house of cards (because that's what it was) tumbled down around my ears a few years ago and my life is SO much better now. :) There's something to be said for doing the best you can without driving yourself crazy!

Hi Marye!
I'm glad to hear that life is better now! You are so correct about not driving yourself crazy. It's a much more peaceful way to live. :)

These look luscious and the biscuits are to die for. Where did you find the recipe? Have only made biscuits twice (my first and last time). Even my dog wouldn't touch them. LOL

Hi Caroline!
I've made biscuits that turned out pretty bad, too. Lol! Maybe your dog will like these. :) Here's the link to the recipe I used, from Cooking Maniac. I didn't use the Cuisinart for them (which she says is optional), and they turned out great. Let me know how things turn out! http://www.cookingmaniac.com/grandmas-flaky-buttermilk-biscuits/
