Chocolate haystacks bring back good memories. I really don’t remember where I first ate the cookies, but I remember loving them.
And, don’t you love those memories from childhood when you first tried a certain type of cookie at a friend’s house or a party? The memory sticks with you forever.
I’m not sure why, but I haven’t eaten them in years until I made this recipe. And, they are so much fun because they’re made out of chow mein noodles. Who would’ve guessed?
There are two things I love about this recipe–one is that they are so easy to make, and two they are very inexpensive to make. I’m all about saving the dough.
With one recipe, I filled up a gallon-sized ziplock bag with cookies and took them to the office at the kid’s school for the holidays and they ate them all up.

You’ll love how versatile the cookies are because the recipe can be made with white chocolate, milk chocolate, butterscotch chips, or even some added peanut butter for a variety of flavors.
I added peanuts to this recipe, but you can leave them out, or add something else. For the holidays, I added sprinkles to the top to give it a little bit of a festive look.
What ingredients do I need to make haystacks?
Chow mein noodles – the noodles will give the added crunch and body to the cookies.
White chocolate chips – white chocolate chips will add the sweetness to the cookie and hold the noodles together once the melted chocolate cools.
Peanuts – peanuts are great for adding a salty taste to the cookie. Plus, you can say you had your protein for the day!
How do I make the haystack cookies?
- Melt the chocolate chips in a large bowl.
- Add the chow mein noodles and stir until coated.
- Toss the peanuts into the bowl and stir until coated.
- Spoon onto a cookie sheet and let them cool.

Start by adding the white chocolate chips to a large bowl. Melt them in the microwave for about one minute, and then stir to help finish melting the chips.
Next, add the chow mein to the melted chocolate.
Add the peanuts to the recipe and stir until both the noodles and the peanuts are coated with chocolate.
Peanuts are optional in this recipe. I like to add peanuts because it creates a salty and sweet taste.
Once the noodles and peanuts are covered in chocolate, scoop them onto a cookie sheet. Or, you can use some parchment paper and spread the cookies out that way and it makes for some easy clean-up.
I scooped out rather large cookies and the recipe created 24 cookies, but you can make them any size you’d like to.
Be sure to scoop fast because the haystacks tend to set up fairly quickly.
I added a few different types of sprinkles to the cookies for the holidays to give them a little pizazz.
It’s always fun to add these cookies to a cookie exchange lineup. You can also add these easy chocolate crinkle cookies, chocolate chip banana cookies (vegan and really amazing), and double chocolate cookies.
Tips:
- Start out by using a large bowl. Once you add the chow mein noodles and peanuts you’re going to need the room in the bowl to stir and coat everything.
- When melting the chocolate chips, start by melting them for about one minute and then stir the chips. If you take them out of the microwave and they look like they still need to be melted, stirring them usually does the trick and melts all of the chips.
- Spoon the cookies fairly quickly onto the parchment paper because they tend to set up fast.

- 1 cup salted peanuts
- 4 cups chow main noodles
- Sprinkles (optional)
Instructions
- Melt the white chocolate in a large bowl for one minute. Stir the chocolate to make sure all of the chips are melted.
- Add the peanuts and chow mein noodles to the bowl and stir until coated.
- Spoon onto a piece of parchment paper and allow to cool.
